A+ Glutenfree Banana Walnut Muffins!

These are from my great friend Lindsay – gluten free, low carb, and really yummy!  They go fast so she always doubles the recipe.

Ingredients:  3eggs,  1/4 cup coconut oil,   3 medium bananas,   5 pitted dates,   1 teaspoon stevia (but they are sweet enough without it),   1/4 cup coconut flour,   1/4 tsp celtic sea salt,   1/2 tsp baking soda,   1/2 cup chopped walnuts (extra if you want to top like in picture)

Directions:  Place eggs, oil, bananas, and dates in a Vitamix (or blender) & blend on medium speed until combined.   Add in coconut flour, salt, and baking soda, and blend until smooth.   Fold in chopped walnuts.  Scoop batter into lined (or greased) muffin tins.   Top with chopped walnuts if desired.  Bake 350 degrees for 22-25 minutes.  Cool & Enjoy!

Makes about 10 muffins – each about 15 carbs and 200 calories.
