Harvest Apple Salad
Apples are full of potassium, folic acid, and fiber, and they taste great! They are a good source of flavonoids, which are compounds that contain high amounts of antioxidants. These antioxidants help to repair oxidative stress, a process that damages body cells and has been linked to the development of diseases such as heart disease, cancer and Alzheimer’s disease. The peel of the apple contains the most flavonoids, so be sure to buy organic apples, wash them well, and enjoy your apples with the peels on!
Now is the best time of year to get your apples at their juiciest and tastiest! Everyone seems to have their own favorite, from Red Delicious to Braeburn to Granny Smith. This is a recipe that uses the tart Granny Smith variety. The pistachios and apricots are also full of vital nutrients and antioxidants. This salad is a wonderful introduction to fall!
1 large Granny Smith apple, cored and thinly sliced
Juice of 1 lemon
1/3 cup cider vinegar
1/3 cup honey
1 teaspoon cinnamon
¼ cup extra-virgin olive oill
8 cups salad greens, such as arugula, red leaf lettuce, or romaine
½ cup dried apricots, chopped
½ cup crumbled bleu cheese
½ cup pistachios
Cover the apple slices with cold water. Add lemon juice and let stand until ready to serve.
Mix vinegar, honey, and cinnamon in a small bowl with a whisk. Gradually add the olive oil, whisking until well blended.
To serve, divide greens among 8 plates. Top each with drained apple slices, apricots, bleu cheese, and pistachios. Drizzle with dressing and serve immediately.
