Honey Glazed Carrots
This is one of my favorite recipes from a great recipe book: The Healthy Gluten-Free Life Recipe Book. I recommend to cook carrots longer than the book had said and since there are so many carrots you can add an extra 1/2 tbsp or honey but otherwise it’s awesome!!
1 Tbsp coconut oil
10 large organic carrots, cut into coins
2 (or 2.5) Tbsp organic raw honey
~ Sea salt
~ Fresh ground pepper
Heat oil in a large skillet over medium heat. Add as many carrots as will fit and do not stir. Let them sit and get caramelized and browned before stirring. Then set them aside and do the same for the remaining carrots until all are browned and softened. The book says this takes 10 minutes, but I suggest you give it twenty.
