Veggie Stir Fry

This is a tasty recipe that was invented by a health-focused nurse practitioner I once worked with.  It is a quick fix and tastes great—it is also healthy, of course!   It is hearty enough to be a meal.  And just to let you know, you can use canned garbanzo beans, but the fresh taste better and have a better consistency for this recipe.

  • 1 package fresh garbanzo beans (chickpeas)

  • 1 package fresh cubed butternut squash

  • 1 can organic diced tomatoes, with or without chiles

  • ½ pound fresh Brussels sprouts, cut lengthwise

  • Pepper and a dash of sea salt, to taste

Stir-fry all of above in a bit of olive oil (cold-pressed is best), then simmer for about 10 minutes, or until the veggies are tender-crisp but not wilting.
