Country Summer Breakfast: Gluten-Free Biscuits & Gravy
Ingredients (Use organics whenever possible.)
2 cups of Cup4Cup flour (Cup4Cup flour is the best gluten-free flour. It’s available at Kroger, Target, and Amazon.)
1 1/2 Tablespoons of baking powder (I usually include extra baking soda and/or baking powder with a recipe to add fluffiness!)
1 teaspoon salt (Try Himalayan or Celtic sea salt e of good quality and healthy trace minerals found in it!)
1/3 cup shortening (or use a one for one ratio of butter blended well with canola oil)
1 teaspoon sugar
1 cup low fat milk (almond or coconut milk to make this dairy-free)
Instructions:
Preheat oven to 425 degrees.
In a large bowl, combine the dry ingredients, stirring to mix well.
Cut in the shortening, using two knives or forks or a pastry blender, cutting up the pieces of shortening into the flour until they are pea-sized.
Gradually stir in milk and mix until the dough begins to form a ball.
Scoop the dough ball onto your floured surface, dust with just enough flour to make the surface less sticky.
With floured hands, gently knead the dough being careful not to overwork the dough.* Then, press the dough out into a rough circle about 1 inch thick.
Cut out circles with a biscuit or cookie cutter about 2-1/2 to 3 inches in diameter. (You can use a glass tumbler like Priscilla used in her Homemade Biscuit recipe that inspired this one!)
Transfer the biscuit rounds to a greased cookie sheet and bake for 13-15 minutes, or until the tops are lightly browned.
Prep Time 10 mins – Cook Time 15 mins – Total Time 25 mins
Makes 6-8 biscuits
Southern-Style Gravy
Prepare biscuits for oven. Then take 1/2 pound (half a chub) of regular sausage (nitrate-free if possible) and brown it with a pan on medium-high heat. Make sure there is no pink, then sprinkle about 1-2 tablespoons of Cup4Cup flour. Stir the flour and sausage around until all of the browned sausage is coated with the flour. Then add about 1 ½ cups of milk. Continue to stir until milk reduces and mixture is thickened to desired consistency. Finish with a few grinds of pepper, serve over biscuit(s).
Both of these recipes inspired by She’s Cookin’ sausage gravy recipe can be easily doubled for 6-8 people.
