Curry Quinoa

Quinoa (keen-wa) is a super-grain.  It is protein rich and is the only grain that provides complete protein (all amino acids that your body requires).

This is actually the second quinoa recipe in our blog.

This delicious recipe is from one of my daughter Laurel’s friends.  It is super nutritious!  Thanks, Kaitlin!

1 cup white quinoa

1 small onion

1 cup frozen peas

1 Tbsp. chili powder (or to taste)

1 Tbsp. curry powder (or to taste)

2-3 cloves garlic

2 cups chicken or vegetable broth

Raisins

1 can chickpeas (garbanzo beans)

Salt, pepper, olive oil

Saute chopped onion and garlic in olive oil till translucent.  Add quinoa and toast in skillet for 5 minutes.  Add broth, bring to a boil, then reduce heat.

Cover and simmer till broth is fully absorbed and quinoa is translucent (15-20 minutes).  While quinoa is simmering, add spices.  When broth is
almost absorbed, add chickpeas and frozen peas.

Add a handful of raisins last.

Serve hot or cold.
