Dr. Lisa’s Lower Calorie (but still really good!) Strawberry or Peach Pie
I can’t resist a good fruit pie, and this is the time of year when the strawberries and peaches are the best. So, let’s take advantage of it!
Mix in pie plate:
1 ½ cups flour, 2 Tbsp. sugar, and 1 tsp salt.
Cut in with pasty blender: ½ cup margarine or oil and 2 Tbsp. milk.
Mix all and pat into pie plate. Bake at 400 degrees for 12 minutes or so.
Filling:
1 cup sugar
3 Tbsp. cornstarch
Pinch of salt
2 Tbsp. white Karo
1 cup water
Cook until thick, and add 2 Tbsp. strawberry jello powder.
Let cool.
Put sliced strawberries into pie shell, and pour cooled filling over fruit. Serve immediately or chill.
You can also use fresh sliced peaches for this pie instead of strawberries. Substitute peach jello powder for the strawberry jello powder.
