Make a Low-Calorie Watermelon “Cake”

There was a birthday in Nurse Anne’s home this past weekend. 

The birthday person shall remain nameless, but, suffice it to say that this person is on a BIG diet.

No Birthday Cake for the Birthday Person, much to the chagrin of the rest of the family! No Birthday Cake is NOT VERY FESTIVE! Leave it to one of our great kids to find a solution to the problem. Read on….

1. Take a medium-sized seedless watermelon and slice off the ends.

2. Cut the rind away from the remainder of the melon so that you’re left with a pink cylinder. Use a small plate as a guide for the knife, if you wish.

3. Decorate the “cake” with any fruit that you want to use. The example in the picture uses strawberries, blueberries, and kiwi, all of which taste wonderful with the melon. However, feel free to experiment with your favorites!

Oh, and don’t forget to add candles!
