The Best Gluten Free Banana Bread

Replace your regular flour with Cup4Cup flour (found at Kroger, health food stores or Amazon) to make many of your favorite recipes gluten free this holiday season! However, it is a good thing to know that many products can have hidden gluten. Read the “Gluten Hides in Many Foods” section of Gluten Free Diet & Dietary Recommendations.

Ingredients

  • 1 stick melted butter

  • ½ cup white sugar

  • ½ cup brown sugar

  • ½ cup plain Greek yogurt or sour cream

  • 1 tsp baking soda

  • ½ tsp salt

  • 2 tsp vanilla extract

  • 2 eggs

  • 3 ripe mashed bananas (medium to large)

  • 1 & ½ cups of Cup4Cup gluten-free flour

Optional Ingredients

½ cup walnuts or ½ cup semisweet chocolate chips (mini if available)

Directions

Preheat oven to 350, and spray 9 inch square pan.  Melt butter, add sugars, yogurt, soda, salt, vanilla, 2 eggs and stir.  Mash bananas in large ziplock bag, then cut edge & squeeze into mix & stir.  Add flour, nuts, and chocolate chips and stir.  Pour into pan.  Bake 50-60 minutes until golden brown and toothpick inserted in the center comes out clean (shorter for metal pans and longer for glass pans).

My daughter Christina loves this as a snack (with water and juice) when she nurses her son Don!
