Mexican Chickpea Salad

Chickpeas, or Garbanzo beans are healthy lentils that provide protein without giving you the gas that sometimes comes with other beans!

  • 3- 15 oz. cans of good chickpeas, such as Bush’s, Goya, or Trader Joes

  • 1 Tbsp. fresh lime juice

  • 1 ½ tbsp extra virgin olive oil

  • ½ cup finely diced red onion

  • ¼ cup minced fresh cilantro

  • ¼ cup of loosely packed shredded manchego cheese

  • 1 cup grape tomatoes, sliced

  • 1 can corn, drained

  • Sea salt to taste

Combine all, cover, and chill for at least 1 hour before serving.

Mix with shredded lettuce.
