Mexican Chickpea Salad
Chickpeas, or Garbanzo beans are healthy lentils that provide protein without giving you the gas that sometimes comes with other beans!
3- 15 oz. cans of good chickpeas, such as Bush’s, Goya, or Trader Joes
1 Tbsp. fresh lime juice
1 ½ tbsp extra virgin olive oil
½ cup finely diced red onion
¼ cup minced fresh cilantro
¼ cup of loosely packed shredded manchego cheese
1 cup grape tomatoes, sliced
1 can corn, drained
Sea salt to taste
Combine all, cover, and chill for at least 1 hour before serving.
Mix with shredded lettuce.
